

I'm sure you can tell by looking through the meals that I generally make that I don't have an issue with grains... BUT, sometimes I like to go lower-carb and no wheat when I'm trying to break through a weight loss plateau. It always seems to jumpstart my goals and get me back to losing, especially after a REALLY not-so-great week. Like vacations, for instance, where I basically just pretend that I have not been changing my life for MONTHS now and forget everything i've taught myself, ha! Oops.
Anyway, these tacos with paleo, grain-free tortillas are a great substitute for the "real thing"! For 2 tacos, it's about 250 calories (the tortillas are about 70 calories each), and you'll get 6 from this recipe.
Here's what you'll need:
8 oz Chicken breast
Shredded Lettuce
Tomato
1/2 Jalapeno
4 tbsp. Franks RedHot Buffalo Wings Sauce
3 tsp. Mexican or Taco Seasoning
For your tortillas:
2 large yellow plantains
2 egg whites
2 tbsp arrowroot powder
1 tsp garlic powder
1 tsp salt
Preheat your oven to 350.
Season your chicken, then place in the oven, baking for about 20 minutes.
Once your chicken is in the oven, start on your tortillas.
Put all of your tortilla ingredients in a food processor and mix until smooth and blended.
Line a baking sheet with parchement paper (spray with a cooking spray).
Drop approx. 1 1/2 - 2 tbsp. balls onto the parchment paper
Smooth into a circle with the bottom of a spoon. Try to get them as thin as possible.
Bake for 15 minutes, until they are starting to brown on the edges.
Remove your chicken and tortillas from the oven.
Shred chicken, toss in buffalo sauce.
Assemble tacos:
Tortilla, Chicken, Lettuce, Tomato, Jalapeno
