

This is one of my favorite healthy recipes. It's so good, and it's also husband approved - but let's be honest,
Geoff LOVES anything buffalo so it's really easy to get him on board with this one.
Here's what you'll need:
8 oz Exta-Lean ground turkey
1/4 cup onion, diced
1 tsp. minced garlic
1/4 cup shredded carrots (I cut all of them in half to make them smaller)
1/4 cup celery, diced
1 head iceberg lettuce, leaves removed to form cups OR Romaine lettuce leaves (I used romaine)
1/2 cup Frank's RedHot Buffalo wing sauce
Shredded mozzarella cheese
Ranch drizzle over the top (optional - Geoff wanted ranch but I decided to go without)
One of the best parts about this meal is that it's just about the easiest meal to make and since everything is already mixed
up in the pan, it's super simple to assemble.
Spray a pan with cooking spray and add the ground turkey, cook it until done over medium high heat
(about 10-15 minutes, stirring occasionally). Strain any liquid.
Add the onion, garlic, carrots, celery and buffalo sauce and cook until heated throughout, about 5-10 more minutes.
Put the mixture in your lettuce leaf of choice, top with cheese, ranch drizzle if you desire, and serve with a side of brown rice.
