Recently, Geoff and I haven't liked our normal enchilada recipes. I can't say what it is.. we used to LOVE the regular beef enchiladas. Maybe we're just more conscious of the fact that we are eating like 17 enchiladas every time we make them because we have no self control when it comes to Mexican food. Whatever the reason, we made this last night and RAVED about how amazing it was. We both ate without looking up for about 5 minutes and then talked about how great this was for another 5 minutes. We are adding it to our usual rotation, and you have to try it! This whole meal was only 428 calories!

 

Here's what you'll need: 

5 cans Whole Green Chilis (we used El Rio brand)

1 Chicken Breast

2 tbsp. Hot Taco Seasoning

1/2 c. Cheddar Cheese, Grated

1/2 can Hot Rotel

Clean Eating Enchilada Sauce (recipe below)

Shredded Lettuce

Spanish Rice (2 c. cooked)

 

Preheat oven to 375 degrees.

Bake your chicken for 15-20 minutes, or until cooked through.

Once your chicken is done, remove from oven and let sit to cook for a few minutes, then shred.

Cut each of your whole chilis down ONE side, then lay 1/2 of them flat on the bottom of a round 9" to form a base.

Top with shredded chicken and rotel.

Use the other 1/2 of the chilis to make a top layer, then top with sauce, then cheese.

Bake for 10 minutes, and cook your rice per package directions.

Remove from oven, cut into 4 slices.

Top with Shredded Lettuce, and serve with Spanish Rice on the side.

 

 

I also make this same dish but with beef. This recipe is approx. 300 calories  

per piece. For the beef version pictured here, I used Extra Lean Ground Beef,

4 Cheese Mexican cheese, and this clean Enchilada Sauce: 

6 oz tomato paste, 1 1/2 c. water, 2 tbsp coconut oil, 

2 tbsp chili powder, 2 tsp garlic powder, ½ tsp onion powder, ½ tsp

Himalayan salt, ¼ tsp cumin, 2 tbsp almond flour (could also use whole wheat)

 

In a medium saucepan add  oil, flour and chili powder and stir to mix. 

Add the water, tomato paste and remaining seasonings and stir until tomato

paste is fully blended. Heat through fully.
