

It's extremely unfortunate that Chipotle doesn't really fit into my new lifestyle.
But, luckily for me (and for you), these fajita burrito bowls are only 450 calories and healthy!
Here's what you'll need:
6 oz Chicken Breast
1 Head of Cauliflower
4 tbsp. of mild taco seasoning mix
1 tomato, chopped
1/4 c. of basil, chopped
1/2 jalapeno, diced
1 Red Bell Pepper, cut into small pieces
1 Green Bell Pepper, cut into small pieces
1 Yellow Bell Pepper, cut into small pieces
4 tbsp. Salsa of your choice (I used Pace Hot Picante)
3 tbsp. Lite Sour Cream
3 tbsp. Guacamole
Cook your chicken:
Place on a baking sheet in an oven preheated to 375 degrees.
Bake for 20 minutes or until cooked through.
While your chicken is cooking, make your rice:
Break off the cauliflower into large florets and using the large portion of a cheese grater,
grate the cauliflower so that it ends up resembling rice. Do this with the whole head.
Place in a microwave-safe dish and microwave for 60-90 seconds, or until warm.
Add tomato, basil, and jalapeno to the 'rice'.
Cover and set side.
Take chicken out of the oven and cut up into bite-sized pieces.
Add 2 tbsp. of water and mix in the taco seasoning, then add chicken to bowl and coat with the seasoning.
Assemble your bowls with 1/2 the rice mixture, 1/2 of the peppers, 1/2 of the chicken,
1/2 of the salsa, sour cream, and guacamole.
Remove foil, top with cheese, and bake for another 15-20 minutes.
