We decided this week to try all new recipes (yay!), and I needed something alfredo. I am so glad that we decided on this clean shrimp & asparagus gnocchi, it was soo good, and only 400 calories!

 

Here's what you'll need:
1 head of cauliflower, chopped into small pieces
2 c low sodium chicken broth
1 tbsp garlic powder
1 tsp onion powder
1/4 c cottage cheese
1/4 c water
1 tbsp olive oil

1 pack shelf-stable gnocchi
1 bunch asparagus, trimmed and cut into thirds
1/2 c water
1/2 lb shrimp

5-6 cherry tomatoes, sliced
1/4 c fresh Parmesan cheese

 

First, make your sauce:
Boil chicken broth. Add chopped cauliflower, garlic powder and onion powder. Cook 15-20 minutes
Remove from heat and let cool (about 5 minutes) 
Add the cauliflower mixture to the blender, and blend

Add cottage cheese, water and olive oil and blend again
Return to pot to simmer on low for about 7-10 minutes, cover and set aside

Heat 1 tbsp oil in a large nonstick skillet over medium heat

Add gnocchi and cook, stirring, until it is plumped and golden (about 10 minutes)

Stir in asparagus and water, cover and cook until the asparagus is barely tender, (about 3 minutes)
Remove from the heat, add shrimp, tomatoes and alfredo sauce, stir, sprinkle with cheese

*Note: I got the shrimp that is in a bag at Walmart pre-cooked and frozen. I just defrosted it before throwing it in. 

If your shrimp needs to be cooked, cook it before adding it to the gnocchi mixture!
