

At 350 calories, these Greek Chicken Pitas make a great lunch or dinner.
Here's what you'll need:
4 oz. Chicken Breast
1/2 Cucumber, chopped into small pieces
1 roma tomato, diced
4 red onion slices, diced
1/4 c. Garlic & Herb Feta Cheese

Roasted Red Pepper Hummus Recipe:
1 clove of garlic, minced
1 (15 ounce) can garbanzo beans, drained
3 tbsp. tahini
2 tbsp. lemon juice
1/2 c. roasted red peppers
Make your hummus:
In a food processor, combine garlic, garbanzo beans, tahini, and lemon juice.
Process until smooth.
Add roasted peppers; process until the peppers are finely chopped.
Transfer to small bowl, cover and chill until you are ready to serve.
Make your pitas:
Cook your chicken by placing on a baking sheet in an oven preheated to 375 degrees.
Cook for 15-20 minutes, or until cooked through.
Cut into small pieces when done.
Open your pita pockets by cutting the top of the pocket a little less than halfway around.
Spread 2 tbsp. of the hummus inside each pita, then stuff with 1/2 of the ingredients for each pita.
