

I am not even joking. I could eat this every single day. It's that good. I am not usually a huge fan of soups for dinner
because I get really hungry at night if I eat soup. But this one is the exception to that rule.. it's hearty and oh so delicious.
Here's what you'll need:
1 zucchini, halved lengthwise and cut into slices
1 small sweet potato, peeled and cut into small (about 1 in) pieces
1 red bell peppers, diced
1 jalapeno pepper, diced
1/2 onion, chopped
1 celery rib, halved lengthwise and cut into slices
1 carrot, halved lengthwise and cut into slices
1 garlic clove, minced
1 can Black Beans
1 can diced tomatoes in juice - do not drain juice (I used the Basic, Garlic, and Oregano flavor)
1 tbsp. Italian Seasoning
1/2 c. water
And the best part... I just threw everything in a large pot over medium high heat, cooked for about 15 minutes, and it
was done. It was that easy. I'm serious.. you HAVE to try this recipe! It's also great for meal prep... make it on a Sunday
or Monday and store in the fridge for up to a week.
