

Jalapeno Poppers is one of the hubbys like 10 foods that he actually likes.
So, making it into a healthy dish at some point was a MUST... and it was DELISH!
And, Only 540 calories for the whole meal, kept me well under my goal for the day... weight loss and great food, Who Knew?!
Here's what you'll need:
2 Chicken Breasts
1 Jalapeno Pepper, diced
1 oz Pepperjack Kraft Natural Cheese
4 tbsp. Fat Free Cream Cheese
4 Slices Turkey Bacon
4 Baby Yukon Gold Potatoes
2 tbsp. seasoning salt
Toothpicks
Preheat your oven to 375 degrees.
Cut your baby potatoes into quarters.
Season with seasoning salt and set aside on a baking sheet.
Put your chicken breasts in between two pieces of plastic wrap and use a meat mallet to flatten.
Tip: You don't want it so thin that it will break, but thin enough that you can roll it.
I made mine about half as thin as it was originally.
Preheat your oven to 375 degrees.
Place your chicken on a baking sheet, plate or another clean area to work on.
Add half of your cream cheese first, starting in the middle and then spreading out just a little bit,
then top with half of your pepperjack cheese, and finally your jalapeno.
Roll your chicken up.
Take one of your turkey bacon slices and start wrapping at the end of the chicken,
it should wrap around about halfway through.
Start the other piece at the end of the 1st piece,
until you get to the other end of the chicken.
Use the toothpicks to secure the bacon and the ends of the chicken, so that the cheese doesn't melt out.
Place seam-side up on your baking sheet, and bake for 10 minutes.
Flip, then bake seam-side down for 15 minutes.
Bake your potatoes for the last 15 minutes, turning halfway through.
Don't forget to remove the toothpicks from your chicken after baking!
