

As you know, I am on a never-ending hunt to not have to eat the same food everyday! I am a huge broccoli lover, but it gets old eating the same broccoli over and over again. These broccoli "tater tots" are cheesy deliciousness in super-cute form!
The marinated steak is tender and with a sweet potato, this whole meal comes out to 550 calories.
Here's what you'll need:
4 ounce sirloin petite steaks
Sweet Potatoes
1 Head of Broccoli
1/3 c. Panko Bread Crumbs
2 oz. Cheddar Cheese
1/4 Onion, Chopped
1 tsp. Garlic Powder
1 tsp. Italian Seasoning
1 Egg
Marinade (recipe below)
The first thing that you need to do for this meal is prep your marinade. I let my steaks marinate for 24 hours, so I did this the day before. Go for at least 30 minutes, minimum.
Mix together:
1/2 c. low-sodium soy sauce
2 tbsp. Worcestershire sauce
2 tbsp. lemon juice
2 tbsp. olive oil
2 cloves garlic, minced
2 tbsp. minced onion
1 tsp. black pepper
Add your steaks to a tupperware container or freezer bag and add the marinate.
Next, Preheat your oven to 375 degrees and then prep your broccoli.
You can chop your broccoli into small pieces, but I used a cheese grater on the large part to make pieces that were small but not TOO small. Then put in a microwave-safe dish, cover, and microwave for 60 seconds.
Add broccoli to a large mixing bowl, then add bread crumbs, cheese, onion, and egg.
Mix together.
Take about 1 tbsp. of the mixture into your hands and roll it into a ball, then use your fingers to roll it out slightly into a "log" shape so that it looks like a tater tot. Flatten out the ends and place on a greased baking sheet.
Bake for 25 minutes, turning half-way through to prevent burning on either side.
Cook your steak to your liking, I put ours on the George Foreman for about 8 minutes for medium-rare.
And cook your potato. We got the ones that can be put in the microwave, and I did time and a half since we had two.
If you are baking, pierce with a fork and bake for 45-60 minutes in the oven.. so these should go in before your broccoli tots.
