This is a really great recipe for "Meatless Monday", but I also sometimes will make this recipe with shrimp or chicken.

Either way, it's delicious and nutritious!


Here's what you'll need:

1 large zucchini, sliced

1/2 onion, sliced

1 carrot, sliced

1 green pepper, sliced

1 serrano chili, diced

1/4 c. Thai basil (or regular basil if you can't find Thai)

1 garlic clove, minced

4 tbsp. Coconut Aminos

2 tbsp. Fish Sauce

1/2 tsp. Cayenne Pepper

1/2 tsp. Red Pepper Flakes

3/4 c. Quinoa (dry)

 

Rinse & Cook Quinoa per package directions.

While that's cooking, cut up all your veggies (zucchini, onion, carrot, green pepper, chili, and garlic) and add them to a pan on medium-high heat. Stir-fry for a few minutes until they are warm. Strain any excess water from cooking and return to pan. Add coconut aminos, fish sauce, cayenne and red pepper flakes.

Plate the Quinoa and then top with the veggie mixture.
