

I get super bored with broccoli and cauliflower - sometimes you just have to have a different side dish.
These were to die for... I love quinoa, red pepper, and avocado, so this is pretty much my dream side. So good!
Here's what you'll need:
1/4 c. quinoa, Soaked, Rinsed and Drained
1/4 c. Brown Rice (you can also just use 1/2 c. quinoa)
2-3 whole Avocados, slices long ways down the middle and pit removed
1/2 Red Bell Pepper, chopped
1 tsp. Garlic Powder,
1 tsp. Onion Powder
1 tsp. Red Pepper Flakes
1 tbsp. Basil, Chopped
Add water (enough for both brown rice and quinoa) to a pot and boil, adding brown rice and cooking to package directions.
Add quinoa to the pot when the timer is at whatever your quinoa is recommended to cook -
I added mine when there was about 20 minutes left.
Once quinoa/rice mixture is done cooking, Add the seasonings, red pepper and basil.
Sir to combine, and then scoop mixture into halved avocados.
