We love chili, but sometimes you just want a new flavor.. ya know? It was a chilly night here in Florida

(yes, we've had like 2 "cold" nights this year), and so we decided.. why not try a new chili recipe?

This ended up turning out pretty darn good and i'll definitely make it again. 

 

Here's what you'll need: 

2 Chicken Breasts

1 cup of corn

1 cup of black beans

1/2 cup of carrots, chopped into small pieces

1/2 cup tomatoes

1/2 small onion, chopped

1/2 cup of salsa of your choice (we used Pace Picante Hot)

1/2 cup water

1/2 tsp of each: chili powder, garlic, onion powder, oregano, paprika, cumin and thyme

 

Preheat your oven to 350 degrees, and bake your chicken breasts for 15-20 minutes until cooked through. 

Add all of your remaining ingredients to a large pot, and bring to a boil over medium high heat. 

Once boiling, turn to low and let simmer for 20 minutes. 

When the chicken is done, shred or cut into small pieces and add to the pot.

 

Optional: Top with a few avocado slices and light sour cream...yum! (I wish I would of thought of that before I made this!)
