Who didn't love bagel bites as a child? It's a pretty common food in most households, but not so great if you are trying to

live a healthier lifestyle. You can make these with any toppings that you want, so they are super kid friendly and easy to

switch up based on your likes/dislikes. They aren't super easy to prepare at first because of the hole in the middle, trying to add toppings was a little difficult! But once I got the hang of it, it wasn't too time consuming. 

Each of these pizzas prepared are only 100 calories! This recipe made 12 pizzas...and they were so good I ended up

eating SIX of them.. Whew! That's a lot of pizzas. Good thing I got a good workout in :)

 

Here's what you'll need: 

1 Chicken Breast

Tomato Sauce of your choice (we used Hunts Basil, Garlic and Oregano)

1 pack of Smart Bagels (or any lower-cal bagel at your store, We got the Toufayan brand)

1/2 red bell pepper, diced

1 jalapeno, diced

4 tbsp. Kick'n Chicken Seasoning

4 oz. Kraft Naturals Pepperjack Cheese, grated

2 tbsp. Red Pepper Flakes

 

Preheat oven to 350 degrees, season your chicken with the Kick'n Chicken seasoning,

put on a baking sheet and pop it in the oven.

Bake for about 15-20 minutes, or until cooked through.

Take it out, let it cool a little bit and then shred (this is a good time to cut up your veggies!)

Take your bagels, and halve them (the ones we got were pre-cut so I just had to open them)

Put in the oven for about 5 minutes, upside down so that the soft middle part is down on the oven rack, to toast.

Take them out, and assemble your pizzas: 

sauce, chicken, jalapenos, red pepper, red pepper flakes, cheese.

Put them back in the oven - straight on the rack (this time obviously bagel side down since you assembled them already!), and bake for about 10-15 minutes, until cheese is melted and the bottom is a little crispy.
