

We eat variations of the same foods all the time, so this was a really nice switch up. It was great to get some different
flavors in our life, and this had so much flavor! The whole meal was about 450 calories.
Here's what you'll need:
8-12 oz. of Fresh Atlantic Salmon Fillets
For the slaw:
3/4 cup finely minced mango
1/4 cup rice vinegar
juice from one lime
1 small jalapeno, diced into small pieces
1 clove garlic, crushed
1 teaspoon Sriracha Chili Sauce
1 small bag Angel Hair Cole Slaw
To make salad:
1 small cup of corn
1 avocado, pitted and diced
1 roma tomato, diced
Preheat your oven to 400 degrees.
Season salmon with a little bit of salt and pepper.
Place salmon, skin side down, on a baking sheet.
Bake until salmon is cooked through, about 12 to 15 minutes.
While that's baking,, make your sauce:
Stir all of the slaw ingredients, besides the angel hair cole slaw, together in a bowl until well combined.
Then pour over slaw and mix.
Cover and put in your refrigerator.
Then make your your salad:
Just mix all of the ingredients together in a small bowl, cover and refrigerate.
Take salmon out of oven when cooked through, plate your slaw, top with salmon, and the salad on the side.
