Sometimes you just need some spinach and artichoke dip flavored food.

These stuffed peppers were so good, and so low calorie, It killed my craving while still sticking to my goals.

 

Here's what you'll need: 

8 oz Chicken Breast

4 oz Artichoke Hearts, cut into small pieces

1 c. fresh spinach, chopped

1/4 c. diced tomatoes

1/4 c. Light Alfredo Sauce

2 Bell Peppers, any color.

2 oz. Pepperjack Cheese, shredded

 

First, cook and shred your chicken:

Place on a baking sheet in an oven preheated to 375 degrees.

Bake for 20 minutes or until cooked through.

Take out of oven, let cool for 5 minutes or so, then shred by pulling the chicken apart with two forks.

Mix your chicken, artichokes, spinach, tomato and sauce in a small mixing bowl. Set aside.

Cut your peppers in half longways, then rinse and make sure you remove all of the seeds.

Stuff your peppers with spinach and artichoke mixture, then place in a shallow baking dish.

Bake at 375 degrees for 25 minutes covered with foil.

Remove foil, top with cheese, and bake for another 15-20 minutes.
