If there is one thing that I would eat every day if I could it would be sushi. I'm obsessed.

But if you've ever tried to make sushi at home, you may know that it's literally the hardest thing ever to make

(or maybe i'm just doing it wrong!). This is MUCH easier, and it's delicious!

 

Here's what you'll need: 

2 4 oz. salmon fillets

3/4 c. uncooked brown rice

1/2 c. chopped carrots

1/2 c. chopped cucumber

1/2 c. edamame

3 tbsp. coconut aminos (or low sodium soy sauce)

Sliced Avocado (not pictured because my store was out of avocado this day.. of course!)

And for the sauce: 

1/2 c. coconut aminos (or low sodium soy sauce)

1/4 c. mirin

1 tsp maple syrup

1/2 tsp ginger powder

1/2 tsp garlic powder

 

Preheat your oven to 375 degrees.

Make your sauce. Place a pot on the stove, add all of your sauce ingredients, and heat to medium.

Mix for about 5 minutes.

Place salmon fillets in aluminum foil, cover with marinade, and seal.

Place sealed salmon in a glass baking dish, and bake 35 to 45 minutes.

While your salmon is baking, cook your rice to package directions and chop your veggies.

Add 3 tbsp. coconut aminos to rice once it's done cooking.

Take salmon out of the oven and assemble:
Rice, Carrots, Cucumbers, Edamame, Avocado, Teriyaki Salmon
