We love chili, but sometimes you just want a new flavor.. ya know? It was a chilly night here in Florida (yes, we've had like 2 "cold" nights this year), and so we decided.. why not try a new chili recipe? This ended up turning out pretty darn good and i'll definitely make it again.

These are a great (and healthier!) alternative to your normal cheeseburger.

I am not even joking. I could eat this every single day. It's that good. I'm serious.. you HAVE to try this! It's also great for meal prep... make it on a Sunday or Monday and store in the fridge for up to a week.

This is a really great recipe for "Meatless Monday", but I also sometimes will make this recipe with shrimp or chicken.

Lasagna Stuffed Zucchini Boats

This is a healthier version of lasagna... and I LOVE lasagna! I originally tried the recipes where you layer zucchini, beef, and ricotta cheese like a real lasagna, just with zucchini strips instead of noodles... and that's good as well, but honestly it just takes too much work and I want the flavor without taking too much time out of my day. That is why these are PERFECT!

 

Chicken Alfredo Spaghetti Squash Pasta

If I could eat one thing for the rest of my life.. it would be pasta. Spaghetti squash is a good alternative, and this dish is loaded with veggies and flavor!
