Spicy Thai Drunken Noodles 

I wanted my favorite Thai meal recently - Pad Kee Mao - but thinking about 1300 calories for just one meal, I just couldn't do it. This recipe for at home thai is just as good as takeout, if not better since it's fresh and lower calorie. This meal came in at about 500 calories.

Salmon with Spicy Mango Slaw 

We eat variations of the same foods all the time, so this was a really nice switch up. It was great to get some different

flavors in our life, and this had so much flavor! FYI - the Corn and Avocado salad is the BEST and the easiest thing to make. The whole meal was about 450 calories. 

Jalapeno Turkey Stuffed Peppers

I Loooovvvee stuffed peppers. And Mexican food. Santa Fe stuffed peppers are amazing! Two of these peppers is about 450 cals.

Red Pepper Quinoa Stuffed Avocados

This side dish was such a great change up from just the usual broccoli side... I love quinoa, red pepper, and avocado, so this is pretty much my dream side dish. So good!

Garlic-Herb Marinated Pork w/ Clean Mac & Cheese

This pork tenderloin is juicy, tender, sooooo yummy, and who doesn't love mac and cheese?

Spicy Chicken Bagel Bites

Who didn't love bagel bites as a child? You can make these with any toppings that you want, so they are super kid friendly and easy to

switch up. And the best part... Each of these pizzas prepared are only 100 calories!

Chicken Enchiladas with Avocado Sauce

Oh. My. Gosh. I cannot even handle this recipe, it's that good. This is a clean recipe, but it's not exactly low in calories so it's kind of a 'cheat meal'.. but I personally wasn't too worried about it. You have to live a little sometimes, Right?! These are honestly the BEST enchiladas that I have EVER made, they were even good the next day!

Chicken & Spinach Lasagna Roll-Ups

I've been dying to try lasagna rolls ever since I first saw them on Pinterest. I love lasagna but I don't love all the calories and extra carbs from the whole box of lasagna noodles.. plus if I make a whole pan, I'm very likely going to eat the whole thing! So instead, I made these perfectly portioned chicken and spinach lasagna roll ups!

This was 400 calories for 2 rolls, and I served with a side salad.

Spicy Rattlesnake Chicken

Back home in the good ol' Kansas City, We have this restaurant called 54th Street. They have this pasta called "Rattlesnake Pasta" which is basically a spicy pasta with chicken, shrimp, and peppers. It's sooooo goooooddd. Last night when Geoff said he wanted something spicy, I immediately thought of this delicious pasta and how we could re-create it to fit our healthier lifestyle. This whole meal, with the side, was only 500 calories (the "real thing" is 1468!!).

Low Carb Chicken Enchilada Bake

We made this last night and RAVED about how amazing it was. It's so good and so easy that we are adding it to our normal rotation, and you have to try it! This whole cheesy enchilada-inspired meal was only 428 calories!

Lightened Up Chicken Parmesan

Chicken Parmesan is one of my favorites, but I haven't had it in a long time because of all those extra calories (approx. 900-1300 in restaurant chicken parm!) This lightened up version, with a salad, logged in at 550 calories. So much better, and this was NOT missing flavor!

Spicy Jalapeno Turkey Burgers

Normally I'm kind of scared of turkey burgers because let's be honest, they can lack flavor and be super boring. But... These are oh so good! Spicy, juicy, and just perfection.

If there is one thing that I would eat every day if I could it would be sushi. I'm obsessed. But if you've ever tried to make sushi at home, you may know that it's literally the hardest thing ever to make (or maybe i'm just doing it wrong!). This is MUCH easier, and it's delicious!
